Governo all’ uso Toscano - IGT Toscana Rosso
80% Sangiovese, 10% Cabernet Sauvignon, 10% Alicante Bouschet
A simple technique that was lost to time is that of “ Governo” according to the tuscan use. With enthusiasm, we have decided to make use of it again and to put ourselves to the test with a new wine. From this technique comes our new wine “Poggio alla Pie- tra”, 80% sangiovese, with equal parts cabernet sauvignon and alicante bouschet.
The technique of “Governo all’uso toscano” entails slow fermenting the wine as soon as it is produced. The additition of a small quantity of grape-must (15% of solely sangiovese grapes) selected and dried on trellises for about 2 months, setting off a second fermentation, confers a more smooth and rounded flavour.
Colour: Intense ruby red with many highlights of violet
Bouquet: A complex harmony of aromas that range from ripe red fruit, above all plum and cherry, to fresh and exotic spices.
Flavour: A powerful and refined wine, very flavourful and lightly sweet on the great finish. Thanks to its versatility it perfectly accompanies meat dishes, boiled or roasted, and also savoury cheeses
